I serve this with buttered noodles. The original recipe called for the apple and onion slices to be left large, but I find the smaller pieces easier for serving and eating (especially for the kids).
Cut apples crosswise into ½" slices and cut core from each slice. Cut each slice into three or four chunks. Melt 2 Tbsp butter and sauté fruit until tender. Arrange in a casserole dish. Add remaining butter to skillet, sauté onion and celery with salt and pepper. Spread over apples. Sprinkle with parsley. Slice sausage diagonally and add. Add an even layer of cheese. Toss crumbs and butter; sprinkle over as a topping. (You can omit the topping if you wish.) Bake at 350 F for 20 to 25 minutes.
