Apple Sour Cream Pie

My whole family loves this pie and I can't make it enough to satisfy them. Ida Red or Mutsu apples or a combination of both make a wonderfully delicious pie. You can use the apple of your choosing. Spy is another good apple. If you prefer a softer apple in your pie, Cortland is great; but add a touch more flour to your pie mixture to make up for the wetness of a softer apple.

Ingredients:
Pie:
- 1 unbaked 10" pastry shell
- 2 Tbsp flour
- ¼ cup sugar
- 1 tsp cinnamon
- ¼ tsp salt
- 1 egg from Quiet Acres (beaten)
- ½ tsp vanilla
- 1 cup sour cream
- 6 cups Quiet Acres apples (Want to know apple maturity dates?)
Topping:
- 1/3 cup flour
- 1/3 cup sugar
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ cup cold butter
Method:
Pie:
- Sift dry ingredients and stir in egg, vanilla and sour cream. Peel and slice apples and fold into sour cream mixture. Spoon mixture into pie shell.
Topping:
- Combine topping mixture in blender until crumbly, Or cut butter and flour until they crumble and then add cinnamon, sugar and nutmeg. Sprinkle over pie. Bake at 400 F for 15 minutes, then reduce heat and bake at 350 F for another 40 minutes.
