Popover Pancake

Plenty of fat in this one so in our house it's a
once-in-a-while weekend morning treat. It's yummy though and
seems to be popular with all but the fussiest young eaters
too. For 2 people, recipe
can be halved and made in a 10" x 6" or similar glass pan.
Preparation Time:
up to 1 hour
Number of Servings:
Serves 5 or 6.
Ingredients:
- 4 eggs from Quiet Acres
- ½ cup butter
- 1 cup flour
- 1 cup milk
- ¼ tsp salt
Method:
Melt butter and spread evenly in a 9" x 13" pan. Beat other
ingredients until thoroughly blended. Pour batter into pan.
(Don't worry that the butter gets pushed to the sides.) Bake
at 400 F for 30 minutes or until puffy and golden. Serve
with a dollop of sour cream and jam. Or mix together 1 cup
honey and 3 oz. orange juice concentrate and spoon mixture
over pancake servings.
