Rhubarb Crisp

My husband Bruce loves this recipe so much that he has planted more and more rhubarb over the years just so we don't run out!

Makes one 9" by 13" pan
Ingredients:
Base:
- 8 cups Quiet Acres rhubarb cut in 1" pieces (Want to know rhubarb maturity dates?)
- ¾ cup sugar
- ¾ cup sugar
- ¾ cup flour
Topping:
- ¾ cup flour
- 8 Tbsp cold butter (approximately 1/3 lb)
- 1 Tbsp cinnamon
- ¾ cup oatmeal
- ½ cup brown sugar
Method:
Base:
- Soak rhubarb with ¾ cup sugar for 1 hour, it will make some syrup. After one hour, add ¾ cup sugar and ¾ cup flour. Pour in buttered 9" by 13" baking dish.
Topping:
- Cut cold butter and ¾ cup flour to a crumble. Add cinnamon, oatmeal and brown sugar to crumble mixture. Spread on top of rhubarb mixture.
Bake at 375 F for 45 minutes to 1 hour, until rhubarb is tender. Serve as is or with vanilla ice cream.
