Ruby's Pie Crust

Having pie shells ready in the freezer cuts down on the time required to make a pie.

5 to 6 nine inch pie shells

Using a fork, combine the flour, salt, sugar and soda. Cut in vegetable shortening using a pastry blender or two knives. Beat together egg and vinegar, then add enough cold water to fill a one cup measure. Add the liquid all at once to the flour mixture; work only until mixture comes away from the bowl.

Divide into 5 or 6 balls. Using a rolling pin, roll each ball to fit a 9" pie plate. You can freeze the pie shells in the pie plates and when the urge hits you to make a pie you will have the shells ready in the freezer. You do not have to thaw the shells, use them frozen if you are making a single-shell pie. If you are making a two-crust pie, you must thaw the top shell to fit the top of the pie.
